By nature I am not the scared type. You could say that throughout my life I have done a lot of really dangerous things with absolutely no thought. Like climbing up the ice-covered frame of the Manhattan Bridge at midnight in the dead of winter. Or riding third on the back of a motorcycle in Germany, touching the ground each time we turned a corner. My college was located in the worst neighborhood in Brooklyn, NY, yet I routinely walked around late at night with no fear. And at almost 70 little has changed. I just do not live in fear because fear kills dreams.

In theory I love to make all my food from scratch but that’s just not realistic. With a little thought it is possible to eat healthy at home. Always being prepared is the answer. I keep many different meal ingredients in my home so I can always make something quick, easy and nutritious. One of my favorite things to keep in my refrigerator is a rotisserie chicken. These are readily available at most supermarkets and delis. While true that they are usually prepared with a seasoning high in sugar and salt, but there are ways to improve the nutrition numbers of a store bought bird.
