Who doesn’t love a peanut butter sandwich? I know I do! Most of us boomers grew up eating a lot of them as it was a go to staple in our simpler world. I bet many of you over fifty women still love peanut butter sandwiches, but if you’re like me, we don’t eat them because of the bread. So I decided to ditch the bread and use a banana in its place. It’s so easy and delicious!
Cut a slightly green banana in half lengthwise. Gently pat 1 – 2 tablespoons of peanut butter on one side of the banana and then put the other side carefully on top of the peanut butter. Cut banana sandwich in half. Make sure to use a peanut butter with no added ingredients except for maybe a pinch of salt. There are many brands available at your local supermarket so no special trip to the health food store is needed. Enjoy!
