These healthy chili nachos are my go to meal when I’m craving Mexican food. Most of us are under the assumption that Mexican food is automatically off the food list when we’re watching our weight but in reality Mexican cuisine is one of the most adaptable to good nutritional eating.
There are some changes I make to the traditional recipe to ensure mine are truly healthy chili nachos. The first difference is I use a lean turkey chili instead of the typical bean chili used for most nachos. I do eat beans but I find them very starchy and bloating. I use the 99% fat free ground turkey so these nachos are not only lower calorie they are also packed with protein.
The second most important change is the chip I use. I make sure to use chips that are lower carb and higher protein than most which increases the nutritional advantage of my healthy chili nachos. Not all chips are the same. This is why I always say “read your labels!”
The last trick is when you’re adding the extras like guacamole and sour cream, dab them on instead of just dumping. It’s really just the taste we need, not a whole mouthful. However, with most salsas use as much as you want if they are tomato based, as most have almost no calories.

TURKEY CHILI
INGREDIENTS
1 lb. 99% fat free ground turkey breast
2 garlic cloves finely minced
1 small sweet onion finely chopped
28 ounce can chopped tomatoes, low or no sodium if available
15 ounce can tomato sauce, low or no sodium if available
2 tablespoons chili powder
PREPARATION
Spray a saute pan with cooking spray
Add garlic and onion and cook over medium heat until translucent
Add turkey to garlic and onion mixture and cook until meat is still slightly pink
Sprinkle chili powder over mixture and fold in to incorporate
Add chopped tomatoes & tomato sauce to meat mixture & cook over low/medium heat for about 45 minutes, stirring often — if pan gets a little dry add some additional tomato sauce or water
