This Tummy Tightening Thai Shrimp Salad (try saying that 3 times fast!) has become the salad I love the most. I always eat a lot of salads regardless of the season but in summer I crave them because they are light and clean.
This tasty salad is loaded with fresh vegetables and protein, a winning combo to help flatten your belly. Vegetables provide fiber which helps to fill you up and also keep your digestive track running smoothly. Protein builds muscle which speeds up your metabolism. I also use nuts and edamame for both nutrition and crunch so no croutons or other carbs needed.
INGREDIENTS
2 cups shredded cabbage
2 cups chopped romaine lettuce
1/4 cup finely chopped fresh mint
1/4 cup finely chopped fresh cilantro
1/2 cucumber, peeled and thinly sliced
1/4 cup shelled edamame
1/4 cup cashews
1/4 – 1/2 pound cooked and cooled shrimp (you can substitute any protein)
1 tablespoon fresh lime juice
1/4 cup peanut sauce
PREPARATION
DRESSING: Mix together lime juice and peanut sauce and set aside
Arrange lettuce and cabbage on a plate and top with cucumber slices
Add edamame and cashews
Sprinkle mint and cilantro over salad
Place shrimp on top
Drizzle salad with dressing
